Ricotta Chicken Orzo Skillet

A creamy and flavorful one-pan dish featuring tender chicken, orzo pasta, and ricotta cheese.

  • 2 boneless, skinless chicken breasts, cubed
  • 1 cup orzo pasta
  • 1/2 cup ricotta cheese
  • 1 tbsp olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried oregano
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chicken and cook until browned, about 5 minutes.
  3. Add onion and garlic, sauté for 2 minutes.
  4. Stir in orzo, chicken broth, salt, pepper, and oregano.
  5. Bring to a simmer, cover, and cook for 10 minutes.
  6. Remove from heat and stir in ricotta and Parmesan cheese.
  7. Garnish with fresh parsley before serving.
