Roasted Brussels Sprouts with Cranberry Glaze

A simple and flavorful side dish combining roasted Brussels sprouts with a sweet and tangy cranberry glaze.

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup dried cranberries
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss Brussels sprouts with olive oil, salt, and pepper.
  3. Spread evenly on a baking sheet and roast for 20-25 minutes until tender.
  4. In a small saucepan, combine cranberries, balsamic vinegar, honey, mustard, and garlic.
  5. Simmer over low heat for 5-7 minutes until slightly thickened.
  6. Drizzle glaze over roasted Brussels sprouts before serving.

Notes

  • For extra crunch, add toasted pecans or walnuts.
  • Use maple syrup instead of honey for a vegan version.
  • Double the glaze if you prefer a saucier dish.
