Roasted Carrots with Whipped Ricotta and Hot Honey

A delicious and unique dish featuring roasted carrots topped with creamy whipped ricotta and a drizzle of hot honey.

  • 1 lb carrots, peeled and cut into sticks
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • 1 teaspoon red pepper flakes
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the carrot sticks with olive oil, salt, and pepper.
  3. Spread the carrots on a baking sheet in a single layer.
  4. Roast in the oven for 25-30 minutes, or until tender and caramelized.
  5. While the carrots are roasting, whip the ricotta cheese until smooth.
  6. In a small saucepan, heat the honey and stir in the red pepper flakes.
  7. Once the carrots are done, plate them and top with whipped ricotta.
  8. Drizzle the hot honey over the top and garnish with fresh herbs if desired.
