Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, cumin, paprika, salt, and pepper.
  3. Spread the cauliflower on a baking sheet in a single layer.
  4. Roast in the oven for 25-30 minutes, or until golden and tender.
  5. Warm the corn tortillas in a skillet or microwave.
