  • 1 whole chicken (about 45 lbs)
  • 2 cups of mixed vegetables (carrots, potatoes, and bell peppers)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 lemon, halved

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rinse the chicken and pat it dry with paper towels.
  3. In a large bowl, toss the mixed vegetables with olive oil, salt, pepper, garlic powder, and thyme.
  4. Place the chicken in a roasting pan and surround it with the seasoned vegetables.
  5. Squeeze the lemon halves over the chicken and place them inside the cavity.
  6. Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Let the chicken rest for 10 minutes before carving and serving with the roasted vegetables.
