Roasted garlic mashed cauliflower

A healthy and flavorful alternative to mashed potatoes made with roasted garlic and cauliflower.

Ingredients

  • 1 large head of cauliflower, chopped into florets
  • 4 cloves garlic, peeled
  • 2 tbsp olive oil
  • 1/4 cup milk or unsweetened almond milk
  • 2 tbsp butter or vegan butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss cauliflower florets and garlic cloves with olive oil on a baking sheet.
  3. Roast for 25 minutes until tender and slightly browned.
  4. Transfer roasted cauliflower and garlic to a food processor or blender.
  5. Add milk, butter, salt, and pepper.
  6. Blend until smooth and creamy.
  7. Adjust seasoning if needed.

Notes

  • For extra creaminess, add more milk or butter.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
