Roasted Garlic Parmesan Carrots

A simple and flavorful side dish featuring roasted carrots tossed with garlic and Parmesan cheese.

  • 1 lb carrots, peeled and sliced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sliced carrots with olive oil, minced garlic, salt, and pepper.
  3. Spread the carrots evenly on a baking sheet.
  4. Roast in the oven for 20-25 minutes, or until tender and slightly caramelized.
  5. Remove from the oven and sprinkle with grated Parmesan cheese.
  6. Garnish with fresh parsley if desired and serve immediately.

Notes

  • For extra flavor, add a pinch of red pepper flakes before roasting.
