Roasted Sweet Corn with Chili

A simple and flavorful dish featuring roasted sweet corn tossed with chili for a spicy kick.

  • 4 ears of sweet corn
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lime juice
  • 2 tbsp chopped cilantro

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Shuck the corn and remove silk.
  3. Brush corn with olive oil.
  4. Sprinkle chili powder, salt, and black pepper evenly.
  5. Place corn on a baking sheet.
  6. Roast for 20-25 minutes, turning occasionally.
  7. Remove from oven and drizzle lime juice.
  8. Garnish with chopped cilantro.
  9. Serve warm.
