  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the cubed sweet potatoes with olive oil, cumin, paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet in a single layer.
  4. Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized.
  5. In the last 5 minutes of roasting, add the black beans to the baking sheet.
