Sage & Sausage Stuffed Acorn Squash

A hearty and flavorful dish featuring acorn squash stuffed with sausage and sage.

Ingredients

  • 2 medium acorn squash, halved and seeded
  • 1 lb ground sausage
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh sage, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Brush squash halves with olive oil and season with salt and pepper.
  3. Place squash cut-side down on a baking sheet and roast for 30 minutes.
  4. In a skillet, cook sausage over medium heat until browned.
  5. Add onion, garlic, and sage. Cook until softened.
  6. Remove from heat and stir in breadcrumbs and Parmesan.
  7. Flip squash halves and fill with sausage mixture.
  8. Bake for another 15 minutes until golden.

Notes

  • Use fresh sage for best flavor.
  • Substitute turkey sausage for a lighter option.
  • Store leftovers in an airtight container for up to 3 days.
