Sausage Sweet Potato Kale Soup

A hearty and nutritious soup combining sausage, sweet potatoes, and kale for a balanced meal.

Ingredients

  • 1 lb sausage, sliced
  • 2 medium sweet potatoes, diced
  • 4 cups kale, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sausage and cook until browned.
  3. Add onion and garlic, sauté for 2 minutes.
  4. Stir in sweet potatoes and cook for 5 minutes.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat and simmer for 15 minutes.
  7. Add kale and cook for another 5 minutes.
  8. Season with salt and pepper.
  9. Serve hot.
