  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 2 cups diced tomatoes
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat.
  3. Add the chopped onion and bell pepper, cooking until softened.
  4. Stir in the diced tomatoes, uncooked rice, beef broth, garlic powder, salt, and black pepper.
  5. Bring the mixture to a boil, then reduce heat and simmer for 5 minutes.
  6. Transfer the mixture to a baking dish and cover with foil.
  7. Bake in the preheated oven for 45 minutes.
  8. If using, remove the foil, sprinkle cheese on top, and bake for an additional 10 minutes until cheese is melted.
