1 cup grits
4 cups water
1 pound shrimp, peeled and deveined
1 cup cheddar cheese, shredded
1/2 cup milk
1/4 cup butter
1 onion, chopped
2 cloves garlic, minced
1 bell pepper, chopped
1 teaspoon Cajun seasoning
Salt and pepper to taste
Instructions
Preheat the oven to 350°F (175°C).
In a pot, bring water to a boil and add grits, cooking until thickened.
In a skillet, melt butter and sauté onion, garlic, and bell pepper until soft.
Add shrimp and Cajun seasoning to the skillet, cooking until shrimp are pink.
Combine cooked grits, shrimp mixture, milk, and cheese in a large bowl.
Transfer the mixture to a greased casserole dish.
Bake for 30 minutes or until bubbly and golden on top.
Notes
For a spicier version, add more Cajun seasoning.
Can substitute shrimp with chicken or sausage for variation.
