  • 1 cup stone-ground grits
  • 4 cups water
  • 1 tsp salt
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp butter
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper

Instructions

  1. Preheat oven to 375°F.
  2. Bring water and salt to a boil in a medium pot. Stir in grits and reduce heat to low. Cook for 20 minutes, stirring occasionally.
  3. In a skillet, melt butter over medium heat. Add onion, bell pepper, and garlic. Sauté until softened.
  4. Add shrimp and cook until pink, about 3 minutes.
  5. Mix cooked grits, shrimp mixture, cheese, milk, black pepper, paprika, and cayenne pepper in a bowl.
  6. Transfer to a greased casserole dish and bake for 25 minutes.

Notes

  • Use fresh shrimp for best flavor.
  • Adjust cayenne pepper to control spiciness.
