  • 1 pound shrimp, peeled and deveined
  • 1 cup grits
  • 4 cups water or chicken broth
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, chopped
  • 1/2 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a pot, bring water or chicken broth to a boil and add grits. Reduce heat and simmer until thickened, about 20 minutes.
  2. Stir in cheddar cheese until melted and smooth. Set aside.
  3. In a skillet, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving drippings in the skillet.
  4. Add green onions and garlic to the skillet, sautéing until fragrant.
  5. Add shrimp, paprika, salt, and pepper. Cook until shrimp are pink and cooked through, about 3-4 minutes.
  6. Serve shrimp over the creamy grits, topped with crispy bacon.
