  • 56 ripe but firm peaches, thinly sliced (about 6 cups)

  • 1 cup packed light brown sugar

  • 1 tablespoon bourbon (optional)

  • 2 teaspoons vanilla extract

  • 1 cup all-purpose flour

  • 1/4 cup finely ground pecans

  • 2 teaspoons baking powder

  • 1 teaspoon cinnamon

  • 1 stick (8 tablespoons) Vermont Creamery Salted Cultured Butter, melted

  • 1/2 cup whole milk, room temperature

  • Cinnamon sugar, for dusting

Instructions

  • Preheat oven to 350°F.

  • In an oven-safe or cast iron skillet, melt 4 tablespoons butter over medium heat. Add peaches, brown sugar, and optional bourbon. Cook for 5–8 minutes until softened. Stir in vanilla extract and remove from heat.

  • In a large bowl, whisk together flour, ground pecans, baking powder, and cinnamon. Add melted butter and milk (room temperature) and stir until just combined.

  • Pour the batter evenly over the peach mixture. Do not stir. Sprinkle generously with cinnamon sugar.

  • Bake for 35–40 minutes, or until golden brown and cooked through.

  • Let cool slightly. Serve warm with vanilla ice cream or whipping cream.

Notes

  • Use thawed and drained frozen peaches if fresh are unavailable.

  • Add a splash of lemon juice to balance sweeter fruit.

  • Omit pecans for a nut-free variation.
