2 pounds beef chuck, cut into 1-inch cubes
4 cups beef broth
4 medium carrots, sliced
3 medium potatoes, diced
1 medium onion, chopped
3 cloves garlic, minced
2 tablespoons tomato paste
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
2 tablespoons olive oil
Instructions
Heat olive oil in a skillet over medium-high heat. Brown the beef cubes on all sides.
Transfer the browned beef to the slow cooker.
Add the carrots, potatoes, onion, garlic, beef broth, tomato paste, thyme, rosemary, salt, and pepper to the slow cooker.
Stir to combine all ingredients.
Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender.
Adjust seasoning if necessary before serving.
Notes
For a thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of water and stir it into the stew during the last 30 minutes of cooking.
Feel free to add other vegetables like peas or green beans for extra nutrition.
