  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat your oven to 225°F (107°C).
  2. In a small bowl, mix together olive oil, garlic, salt, pepper, rosemary, thyme, and Dijon mustard.
  3. Rub the mixture all over the beef tenderloin.
  4. Place the beef on a roasting rack in a baking dish.
  5. Roast in the preheated oven until the internal temperature reaches 130°F (54°C) for medium-rare, about 2-3 hours.
  6. Remove from the oven and let it rest for 15-20 minutes before slicing.
  7. Slice and serve with your favorite sides.
