  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 red bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 12 chipotle peppers in adobo, chopped
  • 1 tablespoon adobo sauce
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, celery, and bell pepper. Cook for 5-7 minutes until softened.
  3. Stir in cumin and smoked paprika. Cook for 1 minute until fragrant.
  4. Add black beans, diced tomatoes, vegetable broth, chipotle peppers, and adobo sauce. Bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes.
  6. Use an immersion blender to partially blend the soup, leaving some chunks.
  7. Season with salt and pepper.
  8. Serve garnished with fresh cilantro and lime wedges.

  • For extra creaminess, blend half the soup until smooth before mixing back in.
  • Adjust chipotle peppers to control spiciness.
  • Top with avocado, sour cream, or shredded cheese if desired.
