  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/4 cup red onion, thinly sliced
  • 1 avocado, sliced
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup ranch dressing
  • 1/4 cup salsa

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken with chili powder, cumin, garlic powder, and salt.
  3. Cook chicken for 6-7 minutes per side until fully cooked. Let it rest for 5 minutes, then slice.
  4. In a large bowl, combine mixed greens, cherry tomatoes, black beans, corn, red onion, and avocado.
  5. Top with sliced chicken and shredded cheddar cheese.
  6. Whisk together ranch dressing and salsa, then drizzle over the salad.
  7. Toss gently and serve immediately.
