A healthy and delicious twist on traditional Bolognese, using spaghetti squash and ground turkey for a lighter meal.

Ingredients

  • 1 medium spaghetti squash
  • 1 lb ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil on the cut sides and season with salt and pepper.
  4. Place the squash cut-side down on a baking sheet and roast for 30-40 minutes until tender.
  5. In a large skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  6. Add the ground turkey and cook until browned.
  7. Stir in the crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 15 minutes.
  8. Once the squash is cooked, use a fork to scrape out the strands and serve topped with the turkey Bolognese sauce.

Notes

  • For added flavor, you can include red pepper flakes for a spicy kick.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • This dish can be made ahead of time and reheated before serving.
