Spiced Chickpea “Masala” Soup with Toasted Coconut & Lime

A flavorful and hearty spiced chickpea soup with toasted coconut and lime, perfect for a cozy meal.

  • 2 cups cooked chickpeas
  • 1 can (14 oz) coconut milk
  • 1 tbsp coconut oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 tbsp garam masala
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 lime, juiced
  • 1/2 cup toasted coconut flakes
  • 4 cups vegetable broth
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat coconut oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until soft.
  3. Stir in garam masala, turmeric, cumin, and coriander. Cook for 1 minute.
  4. Add chickpeas, coconut milk, and vegetable broth. Bring to a simmer.
  5. Cook for 20 minutes, stirring occasionally.
  6. Blend half the soup for a creamy texture (optional).
  7. Stir in lime juice and toasted coconut flakes.
  8. Season with salt to taste.
  9. Garnish with fresh cilantro before serving.

  • For extra creaminess, blend the entire soup.
