Spicy chipotle shrimp tacos are a quick and flavorful meal with smoky heat and fresh toppings.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp chipotle peppers in adobo sauce, minced
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a bowl, mix shrimp with olive oil, chipotle peppers, garlic powder, cumin, and salt.
  2. Heat a pan over medium-high heat and cook shrimp for 2-3 minutes per side until pink and opaque.
  3. Warm tortillas in a dry pan or microwave.
  4. Fill tortillas with shrimp, cabbage, tomatoes, and cilantro.
  5. Serve with lime wedges on the side.

Notes

  • Adjust chipotle peppers for more or less heat.
  • Use flour tortillas if corn tortillas are unavailable.
  • Top with avocado slices or crema if desired.
