Spicy Korean kimchi soup

A spicy and flavorful Korean kimchi soup that’s easy to make and packed with bold flavors.

Ingredients

  • 2 cups kimchi, chopped
  • 4 cups water or vegetable broth
  • 1 tbsp gochujang (Korean red pepper paste)
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp sugar
  • 200g tofu, cubed
  • 2 green onions, chopped

Instructions

  1. Heat sesame oil in a pot over medium heat.
  2. Add onion and garlic, sauté for 2 minutes.
  3. Stir in kimchi and cook for another 3 minutes.
  4. Add water or broth, gochujang, soy sauce, and sugar. Bring to a boil.
  5. Reduce heat, add tofu, and simmer for 10 minutes.
  6. Garnish with green onions before serving.

Notes

  • Use older kimchi for a stronger flavor.
  • Adjust spiciness by adding more or less gochujang.
  • Add other vegetables like mushrooms or zucchini if desired.
