Spicy Lentil Soup

A hearty and flavorful spicy lentil soup that’s easy to make and packed with protein.

Ingredients

  • 1 cup dried lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water and drain.
  2. Heat olive oil in a pot over medium heat.
  3. Sauté onion, garlic, carrot, and celery until softened.
  4. Add cumin, paprika, and chili powder. Stir for 30 seconds.
  5. Pour in vegetable broth and add lentils.
  6. Bring to a boil, then reduce heat and simmer for 25 minutes.
  7. Season with salt and pepper. Serve hot.

Notes

  • Adjust spice level by adding more or less chili powder.
  • For extra creaminess, blend half the soup before serving.
  • Store leftovers in the fridge for up to 3 days.
