  • 4 cups chicken or vegetable broth
  • 2 tablespoons miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon chili paste
  • 2 packs of ramen noodles
  • 2 soft-boiled eggs
  • 1 cup sliced green onions
  • 1 cup bean sprouts
  • 1 tablespoon sesame oil
  • 1 sheet nori (seaweed)

Instructions

  1. In a pot, bring the chicken or vegetable broth to a simmer.
  2. Add miso paste, soy sauce, and chili paste to the broth, stirring until well combined.
  3. Cook the ramen noodles according to package instructions, then drain and set aside.
  4. In serving bowls, divide the cooked ramen noodles.
  5. Pour the spicy miso broth over the noodles.
  6. Top with soft-boiled eggs, green onions, bean sprouts, and a drizzle of sesame oil.
  7. Garnish with nori and serve hot.

Notes

  • Adjust the amount of chili paste to your spice preference.
  • For a vegetarian version, use vegetable broth and omit the soft-boiled egg.
  • Soft-boiled eggs can be made by boiling eggs for 6-7 minutes, then placing them in ice water.
