  • 2 packs of ramen noodles
  • 4 cups chicken or vegetable broth
  • 2 tbsp miso paste
  • 1 tbsp chili paste
  • 1 tsp soy sauce
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 soft-boiled eggs
  • 1 cup sliced mushrooms
  • 2 green onions, chopped
  • 1 sheet nori, cut into strips

Instructions

  1. Boil the ramen noodles according to package instructions. Drain and set aside.
  2. In a pot, heat the broth over medium heat. Add miso paste, chili paste, soy sauce, garlic, and ginger. Stir well.
  3. Simmer for 5 minutes to blend flavors.
  4. Add mushrooms and cook for another 3 minutes.
  5. Divide noodles between two bowls. Pour the broth over the noodles.
  6. Top with soft-boiled eggs, green onions, and nori strips.
  7. Serve hot.
