Spinach Lasagna

A delicious and healthy twist on traditional lasagna, featuring layers of spinach, cheese, and marinara sauce.

  • 9 lasagna noodles
  • 2 cups fresh spinach
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 3 cups marinara sauce
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a bowl, mix ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Layer 3 lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the spinach, and a third of the mozzarella cheese.
  6. Repeat the layers, finishing with a layer of noodles topped with marinara sauce and the remaining mozzarella and Parmesan cheese.
  7. Cover with foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  9. Let it cool for 10 minutes before slicing and serving.

Notes

  • For a vegan version, substitute ricotta and mozzarella with plant-based alternatives.
  • Feel free to add other vegetables like mushrooms or zucchini for extra flavor.
  • Can be made ahead and stored in the refrigerator for up to 2 days before baking.
