A simple and delicious dish featuring chicken breasts stuffed with creamy ricotta and spinach, then baked to perfection.

  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix ricotta, spinach, mozzarella, garlic powder, oregano, salt, and pepper.
  3. Cut a pocket into each chicken breast.
  4. Stuff each chicken breast with the ricotta-spinach mixture.
  5. Heat olive oil in a skillet over medium-high heat.
  6. Sear chicken for 2-3 minutes per side until golden.
  7. Transfer chicken to a baking dish and bake for 20-25 minutes.
  8. Check internal temperature reaches 165°F (74°C).
  9. Let rest for 5 minutes before serving.
