Split Pea Soup with Ham

  • 1 cup split peas
  • 1 ham hock or 1 cup diced ham
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Rinse the split peas under cold water and set aside.
  2. In a large pot, sauté the onion, carrots, and celery until softened.
  3. Add the garlic and cook for another minute.
  4. Stir in the split peas, ham hock, chicken broth, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for about 1 hour, or until peas are tender.
  6. Remove the ham hock, shred the meat, and return it to the pot.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!

Notes

  • For a vegetarian version, omit the ham and use vegetable broth.
  • This soup can be stored in the refrigerator for up to 5 days.
