Spring Detox Asparagus and Lemon Soup

A refreshing and healthy soup made with asparagus and lemon, perfect for a spring detox.

Ingredients

  • 1 lb asparagus, trimmed and cut into pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add asparagus pieces and cook for about 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 15 minutes until asparagus is tender.
  6. Remove from heat and blend the soup until smooth.
  7. Stir in lemon juice and zest, and season with salt and pepper.
  8. Serve warm, garnished with fresh herbs if desired.

Notes

  • For a creamier texture, add a splash of coconut milk.
  • This soup can be served hot or cold.
  • Store leftovers in the refrigerator for up to 3 days.
