200g pitted dates
1 cup boiling water
1 tsp baking soda
100g unsalted butter, softened
1 cup brown sugar
2 large eggs
1 tsp vanilla extract
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp salt
Instructions
Preheat the oven to 180°C (350°F) and grease a baking dish.
In a bowl, combine the chopped dates and boiling water, then stir in the baking soda and let it sit for 10 minutes.
In a separate bowl, cream together the butter and brown sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
Mix the flour, baking powder, and salt in another bowl.
Gradually add the dry ingredients to the butter mixture, alternating with the date mixture, until just combined.
Pour the batter into the prepared baking dish and bake for 30-35 minutes or until a skewer comes out clean.
While the pudding is baking, prepare the toffee sauce by combining 100g of brown sugar, 100g of unsalted butter, and 1 cup of heavy cream in a saucepan over medium heat. Stir until the sugar dissolves and the sauce thickens.
Serve the warm pudding drizzled with toffee sauce.
Notes
For an extra touch, serve with vanilla ice cream or whipped cream.
Can be made a day in advance and reheated before serving.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
