  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 1 cup shredded cheese (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked.
  2. Add the diced onion and bell pepper, cooking until softened.
  3. Stir in the taco seasoning, black beans, corn, diced tomatoes, and beef broth.
  4. Bring the mixture to a boil, then reduce heat and let simmer for 20 minutes.
  5. Serve hot, topped with shredded cheese and cilantro if desired.
