Ingredients
Scale
2 cups fresh strawberries, sliced
1/4 cup granulated sugar
1 cup heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 cup shortcake or sponge cake, crumbled
Instructions
In a bowl, combine sliced strawberries and granulated sugar. Let them sit for about 15 minutes to release their juices.
In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
In serving cups, layer the crumbled cake, followed by a layer of strawberries, and then a layer of whipped cream.
Repeat the layers until the cups are filled, finishing with whipped cream on top.
Garnish with additional strawberries if desired and serve immediately.
Notes
For a lighter version, you can use low-fat whipped cream.
These cups can be prepared a few hours in advance; just keep them refrigerated until serving.
Feel free to substitute strawberries with other berries like blueberries or raspberries.
