  • 4 large bell peppers
  • 1 head of cauliflower, grated
  • 1 cup diced tomatoes
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a large bowl, combine grated cauliflower, diced tomatoes, black beans, corn, cumin, chili powder, salt, and pepper.
  4. Stuff the mixture into each bell pepper.
  5. Place the stuffed peppers in a baking dish and cover with foil.
  6. Bake for 30 minutes, then remove the foil and sprinkle cheese on top if desired.
  7. Bake for an additional 10-15 minutes until the peppers are tender and the cheese is melted.
