  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef or turkey
  • 1 can diced tomatoes (14.5 oz)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the ground meat with onions and garlic until browned.
  4. Add the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper to the skillet and mix well.
  5. Stuff the bell peppers with the meat and rice mixture.
  6. Place the stuffed peppers in a baking dish and cover with foil.
  7. Bake for 30 minutes, then remove the foil and sprinkle cheese on top if desired.
  8. Bake for an additional 10-15 minutes until the peppers are tender and the cheese is melted.
