A flavorful and protein-packed Thai peanut tofu bowl with a mix of fresh vegetables and a creamy peanut sauce.

Ingredients

  • 1 block (14 oz) firm tofu, pressed and cubed
  • 1 cup cooked brown rice
  • 1 cup shredded cabbage
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted peanuts
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp lime juice
  • 1/4 cup peanut butter
  • 1 tbsp maple syrup
  • 1 tsp sriracha (optional)
  • 1 clove garlic, minced
  • 1/2 inch ginger, grated

Instructions

  1. Press tofu for 15 minutes, then cut into cubes.
  2. Heat sesame oil in a pan over medium heat. Fry tofu until golden, about 5-7 minutes.
  3. In a bowl, whisk peanut butter, soy sauce, maple syrup, lime juice, sriracha, garlic, and ginger to make the sauce.
  4. Assemble bowls with rice, cabbage, bell pepper, carrot, and tofu.
  5. Drizzle with peanut sauce and top with green onions, cilantro, and peanuts.

Notes

  • Use natural peanut butter for best texture.
  • Add extra sriracha for more spice.
  • Store leftovers in an airtight container for up to 3 days.
