Tropical passionfruit yogurt mini cakes

Delicious mini cakes infused with tropical passionfruit and yogurt, perfect for a refreshing dessert.

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup yogurt
  • 1/4 cup passionfruit puree
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a mini cake pan with paper liners.
  2. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the yogurt, passionfruit puree, vegetable oil, eggs, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Pour the batter into the prepared mini cake pan, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a more intense passionfruit flavor, add more puree.
  • These mini cakes can be topped with whipped cream or fresh fruit.
  • Store in an airtight container for up to 3 days.
