Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 1 cup crushed pineapple (with juice)
  • ½ cup buttermilk
  • ⅓ cup vegetable oil
  • 1 tsp vanilla extract
  • Optional Add-Ins:
  • 1 tbsp dark rum
  • 1 tsp lime zest
  • ½ cup chopped macadamia nuts

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8×8-inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, and salt.
  3. In another bowl, mix eggs, crushed pineapple with juice, buttermilk, oil, and vanilla.
  4. Combine wet and dry ingredients until just mixed. Fold in any optional add-ins.
  5. Pour into prepared pan and bake for 35–40 minutes or until a toothpick inserted comes out clean.
  6. Cool before serving. Optional: top with whipped cream or coconut glaze.

Notes

  • For extra flair, drizzle a rum or lime glaze over the cooled cake.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
