Truffle Mashed Potatoes

Ingredients

  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 4 tbsp unsalted butter
  • 1 tbsp truffle oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Boil potatoes in salted water until tender (15-20 minutes)
  2. Drain potatoes and return to pot
  3. Heat cream and butter in a small saucepan until butter melts
  4. Mash potatoes with cream mixture
  5. Stir in truffle oil, salt, and pepper
  6. Serve warm
