4 large eggs
1 cup plain yogurt
2 tablespoons butter
1 teaspoon red pepper flakes
1 tablespoon olive oil

Instructions
Bring a pot of water to a gentle simmer and poach the eggs for about 3-4 minutes until the whites are set but the yolks are still runny.
While the eggs are poaching, heat the butter and olive oil in a small pan over medium heat. Add the red pepper flakes and cook for 1-2 minutes until fragrant.
In a bowl, mix the yogurt with a pinch of salt until smooth.
Once the eggs are poached, remove them with a slotted spoon and place them on a plate over the yogurt.
Drizzle the spicy butter sauce over the eggs and yogurt.
Garnish with fresh dill or parsley and serve immediately.
Notes
