A flavorful and healthy turmeric chicken stew that combines tender chicken with aromatic spices and vegetables.

Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1 tablespoon turmeric powder
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 1 can coconut milk (400ml)
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the chopped onion, garlic, and ginger, and sauté until fragrant.
  3. Stir in the turmeric powder and cook for another minute.
  4. Add the chicken thighs and cook until browned on all sides.
  5. Mix in the carrots and bell pepper.
  6. Pour in the coconut milk and chicken broth, and bring to a simmer.
  7. Cover and cook for 25-30 minutes, or until the chicken is cooked through.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh cilantro before serving.

Notes

  • For a spicier stew, add red pepper flakes or fresh chili.
  • This stew can be served over rice or with crusty bread.
  • Leftovers can be stored in the refrigerator for up to 3 days.
