  • 1 cup ube puree
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the ube puree, eggs, and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Chill the dough in the refrigerator for about 30 minutes.
  7. Once chilled, scoop out tablespoon-sized portions of dough and roll them into balls.
  8. Roll each ball in powdered sugar until fully coated.
  9. Place the cookies on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  10. Bake for 12-15 minutes or until the edges are set and the tops are crinkled.
  11. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a stronger ube flavor, use more ube puree.
  • Store cookies in an airtight container at room temperature for up to a week.
  • These cookies can be frozen for longer storage; just thaw before serving.
