  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 cup ube halaya (purple yam jam)
  • 1 vanilla bean, seeds scraped
  • 1 tsp vanilla extract
  • 1 cup heavy cream

Instructions

  1. Preheat oven to 325°F.
  2. Mix graham cracker crumbs with melted butter. Press into a 9-inch springform pan.
  3. Beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each.
  5. Stir in ube halaya, vanilla bean seeds, and vanilla extract.
  6. Pour mixture over crust.
  7. Bake for 50-55 minutes until center is set.
