2 cups young green jackfruit, canned or fresh
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
Salt and pepper to taste
8 small corn tortillas
Fresh cilantro, for garnish
Lime wedges, for serving
Instructions
Drain and rinse the jackfruit if using canned. If using fresh, prepare it by removing the core and cutting it into chunks.
In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent.
Add the minced garlic and cook for another minute.
Add the jackfruit to the skillet, along with chili powder, cumin, smoked paprika, salt, and pepper. Stir well to combine.
Cook for about 10-15 minutes, stirring occasionally, until the jackfruit is tender and can be easily shredded with a fork.
While the jackfruit is cooking, warm the corn tortillas in a separate pan or microwave.
Once the jackfruit is ready, shred it with a fork and mix it well with the spices.
Assemble the tacos by placing the jackfruit mixture in the warm tortillas and garnishing with fresh cilantro and a squeeze of lime juice.
Notes
For added flavor, consider marinating the jackfruit in spices for a few hours before cooking.
These tacos can be topped with avocado, salsa, or your favorite vegan cheese.
