  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup nutritional yeast
  • 1/2 cup cashews, soaked
  • 1/2 cup plant-based milk
  • 1 tbsp truffle oil
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a blender, combine soaked cashews, plant-based milk, nutritional yeast, and truffle oil. Blend until smooth.
  3. Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant.
  4. Pour the blended sauce into the pan and stir well. Cook for 2-3 minutes until slightly thickened.
  5. Add the cooked pasta to the sauce and toss to coat evenly.
  6. Season with salt and black pepper to taste.
  7. Garnish with fresh parsley if desired. Serve immediately.
