Vegetable Stir-Fry with Tofu

A quick and healthy vegetable stir-fry with tofu, perfect for a nutritious meal.

Ingredients

  • 1 block of firm tofu, drained and cubed
  • 2 cups of mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tablespoons of soy sauce
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add minced garlic and grated ginger, sauté for 1 minute.
  3. Add cubed tofu and cook until golden brown, about 5-7 minutes.
  4. Add mixed vegetables and stir-fry for another 5-7 minutes until tender.
  5. Pour in soy sauce and stir well to combine.
  6. Season with salt and pepper to taste.
  7. Serve hot over rice or noodles.

Notes

  • Feel free to use any vegetables you have on hand.
  • For extra flavor, add sesame oil or chili flakes.
  • This dish can be made in advance and reheated.
