Veggie loaded baked frittata

A delicious and nutritious veggie-loaded baked frittata packed with fresh vegetables and eggs for a wholesome meal.

Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • 1 cup diced bell peppers
  • 1 cup chopped spinach
  • 1/2 cup diced onions
  • 1/2 cup shredded cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Sauté onions and bell peppers until soft.
  4. Add spinach and cook until wilted.
  5. Whisk eggs and milk in a bowl, then season with salt and pepper.
  6. Pour egg mixture over the sautéed vegetables.
  7. Sprinkle shredded cheese on top.
  8. Transfer skillet to the oven and bake for 20-25 minutes or until set.
  9. Let cool slightly before slicing and serving.
