Whipped Lemon Ricotta Pasta (Gluten Free)

A light and creamy pasta dish with whipped lemon ricotta, perfect for a quick and delicious meal.

  • 8 oz gluten-free pasta
  • 1 cup ricotta cheese
  • 1 lemon (zested and juiced)
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh basil (chopped)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Cook the gluten-free pasta according to package instructions. Drain and set aside.
  2. In a bowl, whip the ricotta cheese until smooth.
  3. Add lemon zest, lemon juice, minced garlic, olive oil, salt, and black pepper to the ricotta. Mix well.
  4. Toss the cooked pasta with the whipped lemon ricotta mixture.
  5. Garnish with fresh basil and grated Parmesan if desired.
  6. Serve immediately.
