White Lasagna Soup

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground turkey or chicken
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups spinach, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Add minced garlic and ground turkey or chicken, cooking until the meat is browned.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the broken lasagna noodles and cook according to package instructions until al dente.
  5. Stir in the heavy cream, spinach, Italian seasoning, salt, and pepper.
  6. Remove from heat and stir in ricotta cheese until well combined.
  7. Serve hot, topped with mozzarella and Parmesan cheese.
